New flagship model the crowning glory of combination steam oven range

The DGC 6860 XXL from Miele offers top specs / Even available as a plumbed-in unit

Miele has been reporting significant growth rates for combination steam ovens for many years. Now the company is set to round off the range with the DGC 6860 XXL, its new flagship model. This model boasts an extra large interior, top-notch features and, optionally, comes as a plumbed-in unit.

The DGC 6660 XXL first arrived on the market in autumn 2014. This model serviced the traditional 60 cm tall cabinetry recess and, with its 68 l capacity, combines steam oven and a fully fledged oven in one and the same unit. The new DGC 6860 XXL offers the same combination but with improved specifications. Worthy of special mention is the M Touch display, a high-resolution TFT display, allowing machines to be operated like a smartphone and including a practical search function for automatic programmes.

Further features now include Miele's patented wireless food probe to measure the core temperature of meat, fully telescopic FlexiClip runners with a PerfectClean finish and machines pre-wired for Miele@home technology. And, for the first time, there will also be a large DGC XXL plumbed-in version (DGC 6865 XXL).

Cream of the crop of cooking appliances

Given their wide repertoire, combination steam ovens from Miele are considered cream of the crop among cooking appliances. One exceptional application is Combi Cooking which allows users to define individual process stages and to precisely determine not only the operating mode, the temperature and the time but also the humidity level inside the unit.

The Hamburg-based star-spangled chef de cuisine Wahabi Nouri appreciates this food-processing method above all for meat dishes: Sear two kilogrammes of ox shoulder and then slow-cook for 10 hours on roof and floor heat at 75°C and with 70% moisture in a DGC XXL – a culinary sensation, assuming of course the skills to create a perfect marinade and then a gravy!

Besides Combi Cooking, combination steam ovens also offer steam cooking, Sous Vide slow cooking, Fan Plus, roof and floor heat, roof heat, floor heat, Intensive Bake, Cakes Special, Gentle Bake and three grill settings. Alongside manual control, these models offer more than 200 automatic programmes. It is also possible to create one's own programmes using those mentioned above and to save these for future use.

Top-class results through rapid heat-up

Only short heat-up times are sufficient to achieve excellent results in 'steam only' mode. This embraces the principle of displacing oxygen in the cabinet with steam as fast as possible for gentle, wholesome cooking. The DGC 6860 XXL also excels in this discipline and manages to heat up to 100°C in next to no time. The secret to this is a high-performance steam generator (3.3 kW) and the MultiSteam unit: The user simply fills the water tank (not necessary on the plumbed-in model) behind the motorised fascia panel. Water from the tank is drawn into the steam generator behind the rear panel of the oven interior, turned into steam and introduced uniformly via 8 ports into the cabinet. This method of generating steam outside the cabinet offers the additional benefit that there is no build-up of limescale inside the cabinet. MultiSteam generation is an exclusive feature of steam ovens and combination steam ovens from Miele.

Miele has given the stainless-steel interior of the DGC XXL a linen-weave finish. This stainless-steel surface is also finished in PerfectClean, a patented surface finish for ovens which boasts truly exceptional non-stick properties and is simple to clean. Particularly stubborn soiling can be removed using one of a variety of care programmes, such as the 'Soak' cycle which uses steam to soften residues.

The large fully fledged combination steam oven comes replete with a multi-purpose tray, a combi rack, perforated containers for steam cooking as well as a recipe book. It is available in the PureLine range in CleanSteel stainless steel, obsidian black, brilliant white and havana brown.
